Challenge
The project involved delivering a two-storey restaurant within a Grade II Listed landmark - America's former London Embassy, now part of the Rosewood Hotel. This highly sensitive and complex site required close coordination with heritage stakeholders, meticulous planning approvals, and careful integration of modern hospitality requirements within a Listed structure. Adding to the challenge, Carbone London represented Major Food Group’s first UK and European venture, demanding a seamless launch of its globally recognised brand in a premier location.
Solution
G&T provided Cost Management and Project Management services, guiding the project from design development through to completion. We led stakeholder engagement to secure necessary approvals, worked closely with the design team to align vision with viability, and rigorously managed the construction phase to ensure delivery within a live hotel environment. Through proactive oversight and value engineering, we balanced quality and cost without compromise, helping to deliver a refined and operationally efficient restaurant space.
Outcome
The result is a 11,900 sq ft world-class dining destination spread over two floors, accommodating 285 guests. A striking ground floor bar and terrace set the scene, while below lies a main dining room, state-of-the-art kitchen, and private suite. Delivered on time and within budget, Carbone London establishes a bold new presence for Major Food Group in Europe, while respecting and enhancing the architectural heritage of the Rosewood London.
