Duck & Waffle

Duck & Waffle aimed to expand its renowned dining experience to Scotland by establishing a new restaurant within Edinburgh's St James Quarter. The project presented several challenges, including coordinating multiple stakeholders, managing specialist designers, and procuring bespoke interior elements that encapsulated the brand's unique identity. The design brief featured intricate, duck-themed installations such as egg-shaped gold reception desks, custom duck feet tiling, and feather-lined tables, all requiring meticulous planning and execution.

G&T was appointed to provide Cost Management and Project Management services, overseeing the fast-paced fit-out process. Collaborating closely with the client and design teams, we facilitated the seamless integration of bespoke features, including custom cast feather extraction drums and fibreglass waffle stacks adorned with ducks. Our proactive approach ensured effective coordination among all parties, addressing design complexities and procurement challenges to maintain project momentum.
